Ingredients

32 oz of Chicken Broth
1.5 lb of chicken
1 bunch of cilantro
1 medium size can of chopped tomato w/Jalepeno
1 can of Chipolte Peppers in adobo sauce
1/2 diced white onion
2 TBSP of Dark Chili powder
1 TBSP of Cumin, Ground
Tips
You can use left over chicken breasts, in fact I am a huge fan of it. Feel free to salt as you need to, but it's not really necessary being that there is salt in the chipotle and adobo sauce and in the broth. Season as much or as little as you want to.
Directions
Saute onions in extra virgin olive oil until tranlucent
Dice up Chipolte peppers then add to onions with sauce.
Add all spices and chicken and toss until chicken is coated.
Add tomato and bring to a boil.
Add chicken broth and bring to a boil, then lower to a simmer. Let simmer for minimum 3 hours, you can simmer for up to 4.
