Introduction

Ingredients

    1 10.75 oz. can cream of chicken soup
    1/2 cup fat-free sour cream
    1 tsp. lemon juice
    1/4 tsp. curry powder
    1/8 tsp. white pepper
    2 boneless, skinless chicken breasts, poached and diced or shredded
    1 13.75-oz. can artichoke hearts, diced
    1/4 cup butter, melted
    1/2 sleeve reduced-fat Ritz crackers, crushed
    1/2 cup shredded cheddar cheese

Directions

Preheat oven to 350 degrees F. Coat an 8x8" baking dish with nonstick spray.

In a large bowl, stir together soup, sour cream, lemon juice, curry powder and pepper until well combined. Fold in chicken and artichoke hearts and spread mixture in dish. (Can be made up to this point the night before and refrigerated.)

Combine melted butter and crushed crackers; stir in cheese and sprinkle mixture evenly over chicken mixture.

Bake for 30 minutes, until casserole is bubbly and cheese is melted.

    Incredible!
    I love it!! I made a some changes. I didn't use any of the seasoning listed, but instead used 1tsp of Nature's Seasoning. I was out of sour cream, so I just used about 1/3 water. I used canned chkn, marinated artichokes...and then I added 3 cups of cooked rotini pasta. It made a wonderful meal! - 3/9/11
