Introduction
This is not a health/weight loss friendly recipe. Impossible to calculate nutritional info with any true accuracy. However, you can cut down on the bad stuff by trimming excess fat prior to cooking (leave marble inside meat). I am submitting this because there was only 1 other recipe for cooking a Boston Butt. This is one of many ways I know how to cook a Butt, lol. This is not a health/weight loss friendly recipe. Impossible to calculate nutritional info with any true accuracy. Ingredients

1 6-8 lb. Boston Pork Butt
1 Tbs. of your favorite salt
1 Tbs. Black Pepper
1Tbs Olive Oil
3 Tbs. Thai Chile Sauce
Tips
Roasts should be cooked approximately 1 hour per lb. as a rule at 225-250 degrees. This recipe is for those who cook inside. Boston Butt is better on the grill but is a whole different recipe. You will still get a great tasting piece of meat from the oven using any of the BBQ recipes out there. I welcome all of you backyard BBQ chefs to makeover this recipe with your favorite style. Serve with Cole slaw and baked beans.
Directions
Preheat oven to 250 degrees.
Rub roast with Olive Oil
Mix salt and pepper and sprinkle over roast.
Spray heated frying pan with non-stick spray
Sear every side of roast. (sear, don't cook)
Make several 1 inch deep cuts across grain on top of roast.
Rub in Thai Chili Sauce or your favorite sauce making sure to coat inside cuts.
Cover with tin foil to keep from caramelizing the top until the last hour of cooking.
Cook for 7 hours before removing foil. Cook for 1 more hour. Meat should be 170 - 180 degrees in center when done.
Serving Size: Serves 10-16 depending on serving size. Based on an 8 lb. butt.
