I like to make my egg salad in small batches so it is fresh, hence the three eggs. I came up with recipe when someone brought deviled eggs with these ingredients to an Easter Brunch. Ingredients

    3 boiled eggs
    2 Tbsp. light mayonnaise
    1/2 tsp. turmeric
    1/8 tsp. paprika
    1/8 tsp. cayenne pepper
    dash of salt


Directions

Chop eggs. Mix in mayonnaise and spices and blend thoroughly.

Serving Size: 2-3 sandwiches
