Ingredients

    1.5 cup of skim milk ricotta cheese
    75 grams mozarella cheese
    4 tbsp shredded mozarella cheese
    250 grams frozen spinach (or fresh if you can get it)
    3 cups of canned or fresh ripe tomatoes
    250 grams of premade canelloni tubes

Directions

This will make a 5-6 servings

For the filling:
Put your frozen spinach into microwave on high for 4 minutes. When finished drain away water.
In a bowl combine ricotta, 25grams of mozarella and spinach, add salt and pepper.


Once your filling is done, use a teaspoon to stuff it into your premade canelloni tubes. Arrange tubes into a large baking dish, allow a little space in between each 2 tubes.

Place your tomatoes and 1 cup of water into a blender with salt and pepper and blend until it is a smooth and runny puree.

Top your canelloni with the tomato mixture. Sprinle with the remaining mozarella and finish off with parmesan.

Bake in a moderate oven (200c) for approx 45 minutes or as directed on premade canelloni package.
