Number of Servings: 8

Ingredients

    Brown Rice, medium grain, 1 cup
    Lentils, 1 cup (brown or green, but not red)
    Pace Picante Sauce, 1 cup
    15-ounce can of black or kidney beans, no salt added
    3 cups water
    dried onion, chili powder, cayenne, cumin, paprika, other hot sauce to taste

Tips

Can serve with a bit of reduced fat shredded cheese and a spoon of plain yogurt as optional toppings. Can serve with low salt blue corn chips on the side. Nutritional count does not include these items.


Directions

Place all ingredients in saucepan or pot of rice cooker. Bring to boil and simmer for 30 minutes or until liquid has been absorbed.



Serving Size: Makes 8 1-cup servings as a side or 4 2-cup servings as a main dish
