Introduction

Ingredients

    1 medium to large head of cabbaged, quartered and chopped into bite-sized chunks

    4 large carrots, cut into one inch chunks

    4 medium potatoes cut into quarters

    1 12-oz can corned beef

    Salt and pepper to taste

    1 cup water

Tips

If I have calories available to spare, I serve this with cornbread muffins and spoon the juice over the bread.


Directions

Coursely chop the vegetables as described in the ingredients list.

Place the cabbage in the pressure cooker. Top with the potatoes and carrots.

Scoop the corned beef out of the can on top of the vegetables.

Salt and pepper to taste.

Seal pressure cooker and allow pressure to build.

Once the regulator starts to "jiggle" time for 3 minutes.

Quick cool under tap water.

Serve.
