Ingredients

    1/3 cup White Sugar
    3 T. Corn Starch
    1/4 cup Cocoa Powder
    1/8 t. Salt
    2 cups Skim Milk (nonfat)

Directions

1. Mix the first 4 ingredients in a medium microwave-safe bowl. Blend in milk.

2. Microwave on high, uncovered, for 3 minutes. Stir.

3. Microwave for an additional 4-6 minutes, stirring again about halfway through, until pudding is thick.

4. When pudding has thickened, place in a sink filled with cold water. (You may want to place ice cubes in the water to cool it off even more. Continue stirring until the pudding is just slightly warm.

5. Place plastic wrap on the surface of the pudding, and refridgerate for 30 minutes or until cooled completely. Enjoy!

(NOTE: Do NOT skip the cooling stage, or your pudding will form a skin on top, and will become chunky, not smooth.)

I decreased the sugar just a tad and added some epresso powder. Very good, much tastier then boxed sugar free stuff. I will make this all the time! - 1/21/10

Wonderful! I used dark cocoa and almond/coconut milk which reduced the calories even more. The variations seem endless. Maybe vanilla or a lemon/vanilla next time. - 9/1/17

I skipped the cooling stage a bit because I like the skin- but it was still good! - 6/25/08
