    1.5 lbs skinless, boneless chicken breast
    1 can (14 oz) tomatoes, drained and diced
    1 can (14 oz) artichoke hearts in water, drained
    1 samll onion, chopped
    .5 cup kalamata olives, pitted and sliced
    1 cup nonfat chicken broth
    .25 cup dry white wine
    1 TBSP quick-cooking tapioca
    1 tsp curry powder
    1 TBSP chopped fresh Italian parsley
    1 tsp dried basil
    1 tsp dried thyme
    .5 tsp salt
    .5 tsp freshly ground black pepper


Combine chicken, tomatoes, artichokes, onion, olives, broth, wine, tapioca, curry powder, parsley, basil, thyme, salt and pepper in crockpot. Mix thoroughly.

Cover and cook on Low 6 to 8 hours or on High 3.5 to 4 hours or until done.

    this is pretty good - but not what I'd call "incredible"; but I'm always looking for something different I can cook in the crockpot, and this certainly fit that bill! - 2/19/09
