Ingredients

    •2 (1- to 1-1/2-pound) pork tenderloins
    •2 tablespoons vegetable oil, plus more as needed
    •1 1/2 teaspoons salt, plus more as needed
    •1 tablespoon Dijon mustard
    •1 tablespoon chopped fresh thyme leaves
    •1/4 teaspoon ground black pepper
    •2 apples, cored and sliced
    •2 onions, sliced, or 1 large onion
    •1 cup chicken stock
    •1 tablespoon butter

Directions

Sear tenderloin after rubbing with salt and half the oil. Remove from pan. Add rest of oil and add apples and onions. While they cook for about 5 minutes, brush the tenderloin with mustard and sprinkle with thyme and pepper. Add rest of thyme and pepper to apple and onion mixture. Place tenderloin on top of mixture in pan and place in oven. Roast for 10 - 15 minutes on 425*. Remove from oven and remove tenderloin and then put apples and onions back on stove on medium. Add stock and reduce by half. Add butter and melt. Slice and serve.
