Number of Servings: 4

Ingredients

    Canned black beans 230g (drained)
    Red Kidney Beans, canned 230g (drained)
    canned chopped tomatoes 800g (2 x 400g cans)
    Garlic Powder, 1 tbsp
    Ground Cumin, 2 tbsp
    Smoked Paprika, 2 tbsp
    Frozen Corn, 1 cup
    Onions, raw, 1 cup, chopped
    Sunflower Oil, 1 tbsp

Tips

Top with grated cheese or sour cream. Lovely with healthy cornbread muffins. Also would be made for meat-eaters with lean ground beef, turkey mince, or a vegetarian mince/ground substitute. We like it with just beans though!


Directions

Sautee onion in a dutch oven until softened, then add spices and stir until fragrant (about 10 seconds). Then add tomatoes, beans, and corn. Leave to simmer about 10 minutes and then season with salt and pepper to taste.

Serving Size: Makes a big pot which makes 4 generous bowls full
