Introduction

Ingredients

Use the zest and juice of 2 large lemons, (or 3 smaller ones).
Use any milk you like. I used Almond milk because it has near-zero carbs and no sugar.
Tips
It will rise considerably, so don't use too small a dish/pan!
Directions
Bake at a reduced temperature, 325F to avoid dryness.
Mix all the ingredients in a bowl until smooth. Line the bottom of your pan with parchment paper to avoid sticking, or butter&flour your bundt pan. Pour into a lined baking dish (9x13 or a bundt pan would work best).

Bake until a skewer poked into the center comes out clean, or about 60 minutes.
