Introduction

Ingredients

    for each muffin:

    1 piece center cut bacon, cooked, cut in half
    1/8 c shredded cheddar
    1 large egg

Tips

try adding sauteed mushrooms, onions, and green peppers after the bacon and before the cheese. sub the bacon for other breakfast meats, like canadian bacon. tastes like a denver omelette!


Directions

cook bacon, leaving it a little soft so it is flexible. coat muffin tin with cooking spray. layer 1 piece of cooked bacon, cut in half, in an "X" shape on the bottom of the muffin tin. add cheese, then crack an egg on top. season if you like. bake at 350 for 15 minutes or until yolks are set as desired.
