10 almonds
1/2c water
1c nutritional yeast
1/4c double concentrated tomato paste
1 sm bunch oregano
1/2T red pepper flake
a few basil leaves (optional)
1 bunch kale, ripped into chip-sized pieces with stems discarded (183g)
Tips
Dice and freeze the kale stems. These can easily be used to stretch out ground beef (pureed) or in soups or sauces. If desired, fresh kale stems may be added to salads.
Most ovens do not correctly read their temperature. I suggest either an inner hanging thermometer for accuracy or a higher level of attentiveness. The temperature in this recipe matters a great deal. We don't want soggy chips or burned ones, and there's only a few minutes either way.
Double concentrated tomato paste can be found in a tube which is very convenient as not all recipes call for an entire can.
Directions
Soak almonds in water overnight.
Heat oven to 250F.
Combine almonds, water, and remaining ingredients, except the kale, in a food processor. Process for one minute or until oregano stems are no longer visible.
Toss kale in the flavor mixture. Spread on cookie sheets and bake. After cooled, divide into containers.
