Introduction

Ingredients

    20 tomatoes (firm)
    1 full tbsp salt
    1 full tbsp sugar
    3 cloves of garlic
    2 tbsp fresh chopped basil
    1 tbsp oregano
    1 tbsp rosemary
    1 1/2 cups of extra virgin olive oil

Directions

Cut the tomatoes in half horizontaly. Remove all pulp and seeds. Place the tomatoes in baking pan, facing up (like little baskets). Mix the sugar and salt and sprinkle on top of the tomatoes. Bake in medium oven for about 1 1/2 hours, or until water acumulated is dry and tomatoes are wrinkled. Flip the tomatoes over and bake them until they're all wrinkled, without burning them.

Mash the garlic and fry it in a little olive oil. Add the basil, oregano and rosemary, the rest of the olive oil and mix with the tomatoes. Place in a glass jar with good seal and refrigerate.

These tomatoes are great on salads, to be served with bread for a party, and even tasty solo.

Makes 40 servings.
