Introduction

The BEST bran muffins I've ever had! The BEST bran muffins I've ever had!
Number of Servings: 12

Ingredients

    1.5 c. All Bran Original cereal
    1 c. buttermilk (lowfat)
    1/3 c. unsweetened applesauce
    2 egg whites
    2/3 c. brown sugar
    1 t. vanilla (pure vanilla recommended)
    1/2 c. all-purpose flour
    1/2 c. whole wheat flour
    1 t. baking soda
    1 t. baking powder
    1 t. cinnamon

Directions

Preheat oven to 375 degrees. Grease muffin cups.

Mix together bran buds and buttermilk and soak for 10 minutes.

Beat together applesauce, egg whites, sugar and vanilla in large bowl. Add bran mixture. Combine flour, baking soda, baking powder and cinnamon. Stir flour mixture into buttermilk mixture, until blended.

Pour into greased muffin cups.

Bake for 15 to 20 minutes. Yields 12 regular size muffins.
