Ingredients

    2 Tbsp Sesame Oil
    2 Tbsp Rice Vinegar
    1 small onion - chopped
    3 large scallions (green onions) - chopped
    Vegetables of choice (carrots, peas, mushrooms, broccoli, bean sprouts, snap peas) - chopped/thinly sliced
    2 1/2 cups cold leftover rice
    12 oz pre-cooked shrimp (substitue: 2 cups cubed cooked chicken)
    3 Tbsp Teriyaki sauce
    2 eggs

    Pinch of red pepper flakes (optional)

Tips

The secret is to use COLD leftover rice.

Recipe calculated with shrimp, but other protein can be substitued.


Directions

Heat the oil, vinegar, and pepper over high heat in a wok; cook for 30 seconds. Add onion, scallions, and other veggies; cook, stirring occasionally, for 1 minute. Add rice and shrimp; cook stirring occasionally, for 2 minutes.

Whisk together eggs and teriyaki sauce.

Form a well in the rice mixture and pour the eggs into it; let cook for 30 seconds, then stir in a spiral, starting with the egg and working to the outer edge. Stir a few times, then let the rice rest to let the egg cook; repeat several times over the course of 2 mintues, until egg is cooked and rice is dry.
