Ingredients

    French toast
    2 thin slices of brioche bread
    1 egg
    2 tablespoons of semi-skimmed milk
    1/2 teaspoon of vanilla essence

    Blueberry sauce
    1/4 cup of blueberries
    Juice from 1/2 a lemon
    1 tablespoon of caster sugar

Tips

If you're a little impatient, try crushing half of the blueberries to get the flavour out quicker.


Directions

1. To make the french toast; mix together the egg, milk and vanilla essence. Dip the brioche in the egg making sure it is fully covered in the egg mix, the fry in a non-stick frying pan on medium heat.

2. For the blueberry sauce, mix all the ingredients together in a pan stirring occasionally until it is thick and jammy.

Serving Size: Two slices of french toast and 1/3 cup of blueberry sauce
