Introduction

Number of Servings: 6

Ingredients

    2 and 2/3 cup cooked diced or shredded chicken (I use boneless skinless chicken breast)
    1/3 to 1/2 cup plain greek yogurt (to your taste)
    1/3 to 1/2 cup mashed avocado (about 1 avocado)
    1 Tbsp dijjon mustard
    2 tsp lemon juice
    1/4 tsp garlic powder
    1/4 tsp onion powder
    2 tsp dried parsley (or 2 Tbsp fresh, chopped)
    1/2 tsp celery seed
    any other herbs of choice (up to tsp more dried)
    salt and pepper to taste

Tips

-Great for using up leftover chicken. I've used leftover grilled, poached and baked chicken for this salad.
-I often mix in grated carrots and serve inside a whole wheat tortilla with mixed greens.
