Ingredients

2 slices 12 grain bread
1 pound fresh boneless salmon
1 egg, slightly beaten
1 tablespoon chopped dill
1/2 teaspoon salt, adjust to taste
1/4 teaspoon fresh ground pepper, adjust to taste
canola oil for frying

Tasty served with tomato and avocado slices.
Directions
Place bread in a food processor and pulse until fine bread crumbs are formed. Place in a small bowl and set aside.
Remove skin from salmon and cut it into large chunks. Place salmon chunks in food processor and pulse until chopped.
Place salmon in a large bowl. Add about half of the bread crumbs, egg, dill, salt and pepper. Mix well by hand. Add remaining bread crumbs and mix lightly until well combined.
Divide the mixture into four and make it each into a ball. Place on a plate, cover and refrigerate for about 15 minutes.
In a large fry pan, heat a thin layer of oil over medium heat until hot. Flatten each salmon portion to about 3/4 inch and place them in the pan. Fry 3-4 minutes on each side until the internal temperature is 145 degrees.
Serve immediately.
