Ingredients

    Sweet potato, 2 sweetpotato, 5" long
    Onions, raw, 1 medium, sliced
    A Taste of Thai Coconut Milk, 1/2 cup
    Diamond Crystal - Kosher Salt, 1/4 tsp
    Pepper, black, 1 tsp
    Curry powder, 1 tbsp, to taste
    garam masala, 1 serving
    Shredded Coconut, 1 tbsp
    Coconut Oil, 1 Tbsp

Directions

Peel the sweet potatoes, diced into 1/2 inches. Set aside. Slice onions to thin as possible as you can. Heat pan over medium, add coconut oil and heat. Add potatoes and coat with oil, let them cook until they get brown and softened. Add sliced onions and continue to cook until onions are softened. Add curry powder, garam masala, salt and pepper and add coconut milk. Simmer until sauce thickened. Toss shredded coconut into potatoes before serving.

Serving Size: About 1/2 to 1 Cup per serving
