Introduction

Light, fluffy yellow cake. Great frosted with Chocolate ganache or just plain with fresh fruit on top. Light, fluffy yellow cake. Great frosted with Chocolate ganache or just plain with fresh fruit on top.

Ingredients

    14 eggs, separated
    1 3/4 cup coconut flour
    1 cup Truvia
    1 1/2 tsp baking soda
    1 cube butter, melted
    1 1/2 cup milk
    2 tsp vanilla

Directions

Preheat oven to 350*.

Separate the 14 eggs, with the whites in a glass or stainless bowl. Put the yolks in another large bowl.

Beat the whites until stiff.

Whisk the yolks and Truvia till frothy. Stir in milk, melted butter and vanilla. Combine other dry ingredients and stir into the yolk mixture. This will be quite thick. Fold this mixture into the beaten egg whites.

Pour into a prepared 9 x 13 cake pan. Smooth. Bake at 350* about 25 minutes or until done.

Serving Size: Makes 24 2"x3" pieces
