Ingredients

    1 box of Jiffy corn mix
    1 egg
    1/3 cup milk
    1 Tbsp Chia seeds
    1/2 cup boiled cauliflower

Tips

You can add any type of boiled veggies. (Chopped/ Shredded carrots, boiled veggies, green/yellow peppers, sweet mini peppers etc)


Directions

Pre-heat the oven to 400 F
Boil cauliflower in water without any addition for 12-15 mins.
Make muffins according to instruction on packet. (Add first four ingredients together and mix)
Finally add cauliflower mashed into small pieces.
Pour the mix into muffin tray and bake for 15-20 mins.
Voila, delicious corn muffins infused with some extra protein and fiber is ready for you!
