Ingredients

    2 whole wheat low fat low carb tortillas
    approx. 3/4 cup fat free refried beans
    approx. 2 oz. 75% cabot sharp cheddar cheese
    approx. 2 oz. chicken breast, thinly sliced
    diced cilantro

Directions

cook the thinly sliced or chopped chicken breast with fajita seasoning and a splash of lemon juice. Spread half of the refried beans on each tortillas, then half of the cooked chicken, then half of the shredded cheese. Bake in the oven until crisp; put under the broiler for additional crispness. Sprinkle with cilantro, slice into wedges, and enjoy!
