Ingredients

    Sweet corn - on the cob, grilled
    Asparagus - one bunch, grilled
    cilantro - one bunch, washed and coarsely chopped
    1 pint grape tomatoes, quartered
    .5 red onion, diced
    1 red bell pepper, diced
    1 green bell pepper, diced
    2 Haas avocados, diced

    Dressing:
    3 limes, juiced
    3 tbsp Balsamic vinegar
    2 tbsp olive oil
    1 tsp sugar
    2 cloves garlic, minced


Tips

Add avocados right before serving to maintain bright green color.


Directions

Brush corn and asparagus with olive oil, salt/pepper and grill til crisp/tender.
Cut corn from cobs, and cut asparagus spears into 1/2" pieces. Add to other diced fresh ingredients.
Combine dressing ingredients.
Toss together, and serve.
