Introduction

This is my version of this soup (I've added onions and carrots to the original recipe). I'm not on the Cabbage Soup Diet, I just like the soup. Sometimes I'll serve it over brown rice as a meal. Ingredients

    1 Tbs Olive Oil
    4 Cloves Garlic, Peeled & Minced
    1 Medium Onion, Peeled & Coarsely Chopped
    4 Large Carrots, Pelled & Sliced Into Coins
    2 Cups Green Bell Pepper, Chopped
    6 Large Celery Stalks, Chopped
    1/2 Medium Head Cabbage
    1 Can Petite Diced Tomatoes w/Garlic & Olive Oil (I use Safeway Brand)
    1 Envelope Lipton Dry Beefy Onion Soup Mix
    1 XL Knorr Beef Bouillon Cube
    1/2 Bottle V-8 Juice (Use "Spicy" for more of a kick)
    2 Cups Swanson Beef Bouillon

Tips

I let mine simmer on the stove all day, about 6 hours, so that it gets very thick, almost like a stew.


Directions

Sautee Onion, Celery, Carrot, and Green Bell Pepper in Olive Oil until slightly soft. Add garlic, cook one more minute. Add all other ingredients. Simmer on low for at least 2 hours. Season to taste - I like Sea Salt, Cracked Black Pepper, and dried Basil flakes.
