Introduction

Number of Servings: 4

Ingredients

    1 pkg kilbasa (cut into 1 inch bite size pieces)
    1 pkg sour kraut, undrained (I used the one with the caraway seeds)
    4 med red potatoes (skin on and cubed)
    2 cloves garlic (peeled and diced small)
    1 sm-med onion (I used yellow onion--chopped small)
    extra virgin olive oil (enough to cover bottom of pan)
    chicken broth/stock (low sodium-enough to cover about an inch of bottom of pan)
    Salt/pepper to taste

Directions

1) Pour extra virgin olive in a med/low heated pan (dutch oven or stock pot)
2) Next put onion and garlic in to saute (about 5 minutes)
3) Put kilbasa in and mix with onion and garlic (continue to saute 3 minutes)
4) Put chopped potatoes on top of mixture, add salt and pepper to cover--do not stir
5) Add chicken broth/stock
6) Pour sour kraut over potatoes, again do not stir
7) Cover with lid and let go until liquid is almost completely absorbed (about 1 1/2 hours)
