Number of Servings: 1

Ingredients

    1 tsp extra-virgin olive oil
    1/2 sweet onion, chopped
    2 clove garlic, minced
    1/2 c crumbled extra-firm tofu
    Pinch of salt
    Pinch of freshly ground pepper
    1/2 c Spinach
    1/2 c Green Peppers, chopped
    1/4 tsp Pepper, red or cayenne( more or less to taste)
    1 tsp ground turmeric
    2 tbsp Daiya, Cheddar Style cheese
    salsa to taste

Directions

Heat oil in a small nonstick skillet over medium-high heat. Add onion and cook,until soft, add garlic, bell pepper, tofu and spices, cook untill peppers are soft and tofu is hot, toss in spinach and cook around 2 more minutes. top with vegan cheese and salsa
