Ingredients

1/3 c. coconut oil
1/3 c. coconut flour (I like Nutiva brand)
1/3 c. unsweetened cocoa powder
1 tsp. instant coffee granules, decaf
5 whole eggs
1/2 c. swerve sweetener, granulated
2 tsp. pure vanilla
Tips
You can buy Swerve Sweetener at swervesweetener.com - it's erythritol, zero calorie and zero weird stuff.
Directions
Preheat oven to 350 degrees.
Whisk together coconut flour, cocoa powder, swerve and instant coffee.
Melt coconut oil in microwave (about 30 seconds) and stir into flour mixture.
Add in eggs and vanilla and whisk/blend until smooth.
Pour into greased 12x9" pan.
Bake 22-27 minutes.
Allow to cool (otherwise will be extra crumbly).
ENJOY!

I am trying this recipe today but it does not list the amt of coconut oil so I am using about half a cup. Will let you know what happens... - 11/26/14

I can't believe I forgot to add that! So Sorry. I use 1/3 c. coconut oil. But 1/2 cup would be even more delicious and should only add 40 extra calories per brownie (if using 9 portions). Thanks for catching my mistake =)
