Introduction

Tiny saffron gnocchi from the farmer's market combined with bay scallops. Tiny saffron gnocchi from the farmer's market combined with bay scallops.
Number of Servings: 4

Ingredients

    1 lb Saffron gnocchi
    2 Tbs olive oil
    1 Tbs shallots
    1 Tbs parsley
    3/4 c white wine
    1 lb small bay scallops

Directions

Cook gnocchi separately in boiling salted water. Set drained gnocchi aside. In large saute pan saute shallot and parsley. Add scallops and cook until scallops start turning white. Add wine. Remove scallops and continue cooking sauce until reduced half way. Toss the scallops and gnocchi back into the sauce and serve.

Serving Size: makes 4 1-cup servings
