    3 C Spelt Flour
    1 Teaspoon salt
    1 Teaspoon baking soda
    3 Eggs
    1 C Coconut Oil
    2 C Coconut Sugar
    2 C unpeeled, raw zucchini, grated
    1 C Chopped Nuts (optional)


The recipe says whole wheat flour but Spelt flour is not in the data base.


Sift together flour, salt and soda. In another bowl, beat eggs. Add oil, vanilla, sugar and zucchini. Mix well. Stir in flour mixture. Fold in nuts. Pour into paper lined cupcake pan. Bake at 350 degrees for 30 minutes. Remove from pans and cool on racks.
