Introduction

Ingredients

    1 pound whole wheat penne
    3 tbsp olive oil
    1/4 pound bacon, diced
    1 1/2 pounds chicken thighs, chopped into bite-size pieces
    1 medium to large onion, chopped
    1 carrot, peeled, grated
    1Tbsp dried rosemary
    Black pepper
    1Tbsp garlic powder
    1/2 cup apple juice
    1 can whole tomatoes (28 ounces)

Tips

sprinkle some parm cheese over each serving.


Directions

Boil pasta as per instructions on box
heat 2T olive oil in a skillet over med heat
add bacon & brown
add 1T olive oil
add chicken & brown evenly
add onion, spices, carrot
stir
cook till vegetables are soft
add apple juice
reduce 1 minute
add tomatoes & crush them
simmer till sauce thickens
drain pasta & add to skillet
stir

Serving Size: 8 servings (approx 1.5 cups each)
