Introduction

The perfect addition to a PBJ sandwich or as a filling for cakes, this jelly has the great benefit of no refined sugar! Use a local honey and pure grape juice for best results, and play with the types of honey for different flavour sensations! Serving size is 2 tbsp, makes about 6 cups total. Ingredients

    1 package powdered pectin
    2 1/2 cups pure, unsweetened grape juice
    2 3/4 cups honey

Directions

Mix the pectin and grape juice in a pot over high heat.
Cook until bubbles form all around the edge of the liquid.
Slowly add the honey, stirring constantly, and continue to stir and cook the mixture until the entire surface is bubbling, but not boiling.
Remove from heat.
Alternately stir and skim off the foam that forms.
Pour into hot sterilized glasses, seal them and leave them undisturbed until the fluid has cooled and set ... about 24 hours.
