Ingredients

3 egg whites
2 tablespoons of finely chopped yellow onion
2 tablespoons of finely chopped pickled jalapenos
.5 oz cheddar or 1 laughing cow wedge
1 piece of whole grain bread
Tips
Cook the eggs until the moisture is minimized.
Also if you go the laughing cow route try to sliver a piece of it with your fork for each bite you take! It's to die for!!
Directions
First heat up the non-stick pan to medium low (if you don't have non-stick use a little bit of pam)
While that heats up start chopping the onion and jalapeno pieces.
After pan is heated, add the jalapeno pieces and onion to the pan.
As they cook a little start separating the yolks from the egg-whites (I like to use the egg shells as a little cup to separate the yolks)
Now that the onion and jalapeno are cooked add the egg-whites to the pan.
While the egg-whites are cooking put a piece of bread in the toaster.
Stir the eggs consistently while cooking and add cheddar cheese, or instead my personal favorite is to wait till the eggs are finished and instead of mixing cheddar cheese have a laughing cow wedge on the side.
Now enjoy!
