Introduction

I have been on a Feta kick lately and had extra spinach I needed to use up in the freezer, so I made this! Use one whole egg and two egg whites to lower the calories a bit. Ingredients

    1 whole egg
    2 egg whites
    1 handful of baby spinach, torn (nutritional info is for 10 leaves)
    1 tbsp of skim milk
    1/4 cup of feta cheese (full fat used in nutritional info)
    dash of salt
    dash of pepper

Tips

Add some Kalamata olives and/or sun-dried tomatoes. Yummy!


Directions

Put milk in a small skillet and heat to medium heat. Add torn spinach, one whole egg and two egg whites. Sprinkle salt and pepper on top. Stir occasionally. When the eggs are halfway done, top with half of the Feta cheese. Stir some more. When the eggs are fully cooked, top with the remaining Feta, put it in a bowl and eat it!

Serving Size: This recipe makes one serving.
