Ingredients

1 package boneless, skinless chicken thighs (10 thighs)
1 can chipotle peppers in adobo sauce (7oz)
1 can diced green chiles (4 oz)
1 bag frozen sweet yellow corn (16 oz)
1 can black beans, drained and rinsed (15 oz)
.25 cup cider vinegar
1 can tomato sauce (15 oz)
Spices to taste: Cumin, coriander, paprika, cinnamon, salt, chili powder
1 tsp brown sugar
Directions
Mix all ingredient in crockpot, set on low for 6 hours. At end of cooking time, remove chicken and chipotles, shred and add back in. Serves 6.
