Ingredients

    5 medium-to-small Potatoes (26 oz raw)
    1 medium Onion (5 oz)
    7 oz Polska Kielbasa (or other sausage)
    1 tbsp Butter
    1/2 c 1% Milk
    1/2 c Fat-free Sour Cream
    1 lb Saurkraut

Tips

Fat content could be reduced significantly by using a healthier sausage or sausage alternative. The recipe could be made easier by using pre-made mashed potatoes instead of homemade.


Directions

Wash potatoes. Peel if wanted - I left the skins on. Dice potatoes into cubes (smaller cubes cook faster and are easier to mash). Put in a pot and cover with water. Boil for 15 minutes or until potatoes are soft.

Meanwhile, chop polish sausage and onion into bite-size pieces. Fry in a skillet (use non-stick spray) until onions are translucent and starting to brown.

Preheat oven to 350. When potatoes are done, remove from heat and drain water. Mix in a large bowl with butter, fat-free sour cream, and milk. Add salt and pepper to taste. Mash well.

Layer casserole with two layers each of sausage and onion mix (bottom), saurkraut (middle), and mashed potatoes (top). Cook for 15 minutes in the oven. Enjoy!
