Introduction

Number of Servings: 6

Ingredients

    2 can chicken broth
    2 boneless skinless chicken breast
    2 cups broccoli(chopped)
    2 carrots(chopped)
    1/2 cup bell pepper(diced)
    1/2 cup onion(chopped)
    2 stalks celery(chopped)
    1 1/2 cup cooked brown rice
    Mrs. Dash to taste
    1 can cream chicken soup

Directions

Cook rice seperately. Chop veggies. Add all ingredients in a large pot and let simmer for 1 1/2 hours. (Could also be cooked in a slow cooker.)

    I just got done making this soup and it is delish! I made it with homemade chicken stock that I also found on SP and I also made my own cream of chicken soup. I don't purchase any more canned soups at all. I love that I know what is going into my soup and that it is ALL healthy. - 2/10/13

    Made this soup today for work tomorrow. Really simple and easy, but taste great. I doubled the chicken and carrots to make it extra hearty. Will definitely be making this again!!
