Ingredients

    Mango Salsa:
    1 cup of mangos, diced
    1/2 red onion, diced
    1 jalapeņo, deseeded and diced
    Juice of 1/2 lime
    fresh cilantro, chopped finely

    Black Bean mix:
    1 can of black beans, drained and rinsed
    1 can of corn, drained and rinsed
    pinch of cumin

    Shrimp:
    12 Shrimps, peeled and devained
    pinch of cumin
    pinch of red pepper
    1 tsp of olive oil
    pinch of chipotle seasoning
    1/4 cup of water (or tequila if you can flambe)

    3 Whole Wheat Tortillas

Directions

In a small bowl, combine the mango, jalapeņo, onion lime juice and cilantro. Set aside.

In a small saucepan, add beans and corn with a dash of cumin. Stir to combine, cook for 3-4 minutes and set aside.

In a pan, add oil and garlic and let cook for 1 minute. Add shrimp, red pepper, cumin and seasoning. Cook until shrimp are opaque. Add the liquid and cook for another minute.

Assemble taco with 1 tortilla, 3 shrimp and mango sauce. Serve black bean mix on the side.
