    Sour Cherries ( fresh if possible ) 2 cups
    Arrowroot Flour 1Tbs
    Maple syrup 3 Tbs
    Corn Starch 1Tsp
    Coconut oil 0.5 cup
    GF Oats 0.75 cup
    Quinoa flour 0.25 cup
    Almonds slivered to taste
    Unsweetened coconut flakes
    Vanilla 1Tsp
    Almond Extract 0.5 Tsp
    Dash of salt


My husband did not find it to be very sweet, so try your cherry mix and add sugar, or maple syrup according to taste. You may also use whatever fruit, berries you have on hand.


Preheat the oven to 350 F. Mix the cherries, cornstarch, arrowroot flour , half the maple syrup, vanilla, and almond extract in a bowl. Let the mixture thicken a bit. In a separate bowl mix oats, quinoa flour, almonds, coconut flakes, cinnamon and salt. Melt the coconut oil and stir into the oat mixture. Grease your baking dish with some coconut oil, and add the cherries. Top with the oat mix, and bake away! Bake for 35-40 minutes, until the topping is golden.
