Ingredients

    500g/18oz minced/ground beef
    100g/3.5oz pureed carrot
    150g/5oz mushroom pieces
    1 tbsp Olive oil
    1/4 tsp salt
    Black pepper
    2 sprigs of parsley
    2 cups water
    500g/18oz butternut squash, mashed
    1 tbsp butter

Tips

I believe this recipe is suitable for the Specific Carbohydrate Diet and for gluten-free diets, but please check for yourself - I'm no expert!


Directions

Preheat oven to Gas Mark 6 400F 200C

Saute the mushrooms in the olive oil. Add the beef and continue cooking for 5 mins, stirring regularly. Add the pureed carrot, salt, pepper, parsley and water. Simmer for 15 mins or until water has mostly evaporated.

Tip meat mixture into a baking dish and cover it with the butternut mash. Dot the top with butter.

Place in the oven and cook for 35-45 minutes.

Serving Size: Makes 4 servings
