Ingredients

1 1/2 Cups Egg White (carton)
1/3 C Truvia Baking Blend
2 Tbsp Buttermilk powder
1/4 (scant) C desiccated coconut (unsweetened)
1 Cup Jen Eloff's Gluten-Free Bake Mix
1/3 C sucralose (or to taste)
Tips
Inclusion of Truvia Baking Blend means they are not completely low carb, but they are under 5 grams carb per cookie and a sweet treat.
Directions
1 1/2 Cups Egg White (carton)
1/3 C Truvia Baking Blend
Beat egg whites until soft peaks form. Blend Truvia Baking Blend in coffee grinder, until powdered. Once soft peaks are formed, add powdered Truvia and mix until well blended and until whites are stiff.
2 Tbsp Buttermilk powder
1/4 (scant) C desiccated coconut (unsweetened)
1 Cup Jen Eloff's Gluten-Free Bake Mix
1/3 C sucralose (or to taste)
Sprinkle remaining ingredients on top of stiffened egg whites and gently stir until blended, trying not to deflate egg white.
Using 1 Tbsp scoop, scoop onto baking pans prepared with Silpat or baking parchment.
Bake for 10 minutes in 300-degree oven. Turn oven off and let sit in closed oven until done (2 hours).
Serving Size: Makes approximately 30 cookies
