Introduction

Delicious and quick supper, and a great way to use up some of those surplus CSA greens. Delicious and quick supper, and a great way to use up some of those surplus CSA greens.
Number of Servings: 4

Ingredients

    1 can (425 grams) cannelini (white) beans
    2 links fresh chorizo sausage
    2 or 3 garlic scapes, chopped into 1/4" pieces
    1 T. olive oil
    2 cups chopped fresh spinach
    1/4 t. crushed red pepper flakes

    Salt and pepper to taste

Directions

Cook chorizo sausage links in medium skillet until brown and firm to the touch. Set aside. Add olive oil to skillet and saute garlic scapes until they start to become translucent. Add the cannelini beans with liquid and the red pepper flakes, salt, and pepper; let simmer for a few minutes. Add chopped spinach and continue simmering until spinach begins to wilt. Slice the chorizo links and add to mixture, stir, simmer for a few more minutes, and serve.

Serving Size: Makes approximately 4 3/4-cup servings
