Ingredients

1 cup water
2 3/4 tsp yeast, active dry
2 1/2 cups flour, white unbleached
1 tsp kosher salt
Directions
Put water and yeast in bread machine pan, let dissolve for 10 minutes to get bubbly. Add flour and salt and turn on bread dough setting. Put 1 tsp olive oil in a bowl. When bread dough is done, remove from pan and place in bowl turning it over to lightly coat with olive oil. Drop into ziploc bag and let it sit all day, or overnight in refrigerator. 12 hours is ideal to develop flavors, but can be used sooner.
An hour or more (the more the better) before needing the dough, put last tsp of olive oil into a large bowl (2 qt). Form dough into a ball and drop dough in, and recoat in oil by turning it over again. Let rise in a draft free place. (Turning the oven on 200 degrees for just 5 minutes helps get it started. Place dough in only after you turn the oven off.)
I make this the evening before, refrigerate overnight, remove in the afternoon and let rise until I need it. It's really easy.
