Introduction

Ingredients

    Cake:
    2 medium ripe bananas, mashed
    1 large egg
    1/2 tsp vanilla
    1 Chocolate flavored boxed cake mix (mix only)
    1/2 cup walnuts, pieces (optional)

    Filling and Topping:
    Weight Watcher's whipped cream cheese spread, 8 tablespoons
    Smucker's Natural Fruit Spread, Strawberry, 8 tablespoons
    1 cup of fresh strawberries, sliced
    1 cup of fresh blueberries

Tips

This cake was fun to make with my grandkids for the 4th of July. We added a candle and sang happy birthday to America. Then I let them decorate it with American flags. (After the candle was blown out, of course!)

To lower that fat even more, leave out the egg and the walnuts. Prepared either way, the cake is brownie like and could be sliced into smaller pieces.


Directions

Cake:
Preheat oven to 350 degrees. Placed bananas into a large mixing bowl and mash thoroughly. Stir in egg and vanilla. Stir in dry cake mix until moist. Stir in walnuts. Divide batter into two 8 inch round prepared baking pans. Bake for 25-30 minutes. Remove from pans and allow to cool completely.

Filling and Topping:
Place one cake layer on a serving dish. Spread to top only of the bottom layer with 1/2 of the cream cheese, then 1/2 of the fruit spread, then 1/2 of the sliced strawberries and 1/2 of the blueberries. Top with second cake layer and repeat.

Serving Size: Makes one cake, about 10 slices
