Number of Servings: 4

Ingredients

    2 Tbls olive oil
    2 tsp diced garlic
    1 small onion diced
    1 Large Can of Canned Italian Tomatoes - diced
    1/2 tsp each of ground oregano and basil
    2 small cans of low sodium chicken broth
    1 can of white beans, rinsed and drained
    8 Trader Joes Turkey meatballs (or sub any frozen meatball)
    Fresh grated Parmesan cheese for topping

Directions

Saute onions and garlic in olive oil. Add canned tomato, spices, chicken broth and meatballs. Bring to boil and simmer for about 20 minutes. Then add beans and simmer 10 more minutes. Top with fresh grated Parmesan cheese prior to serving.
This makes 4 servings with 2 meatballs each.
Look for low sodium tomato to bring the sodium count down.
