Introduction

This is super yummy, with or without the tuna. This is super yummy, with or without the tuna.
Number of Servings: 8

Ingredients

    One 12.5 oz can of tuna, drained (approx. 8.5 ounces)
    5 tomatoes
    1 red onion
    1 sweet bell pepper (I prefer yellow for this, just from a presentation standpoint)
    1 hot chili pepper (to taste)
    2 medium cucumbers

    3 tbsp olive oil
    1 tbsp lemon juice
    1 tbsp white vinegar

    1 tsp dill
    1 tbsp chopped fresh parsley or basil (one or the other, not both)
    salt & pepper to taste (I never actually use these on this salad, but I have friends who much prefer it with the extra seasoning)


Tips

*NOTE: I don't always have lemon juice; when I don't, I either squeeze a lemon over the salad or just double the vinegar, depending on what I've got on-hand.


Directions

Hi everyone, Here's my Mediterranean Salad recipe. The directions are, chop the veggies, add the liquids, sprinkle on the spices, toss, serve. It keeps quite well in the fridge so I like to make it at the start of the week so I can take it to work with me.
