Introduction

Similar to El Torito's Cilantro dressing, but with Greek yogurt instead of mayo a the base. Similar to El Torito's Cilantro dressing, but with Greek yogurt instead of mayo a the base.
Number of Servings: 10

Ingredients

    1 medium Anahein chile, roasted, peeled and seeded
    1 1/2 oz roasted pepitas (pumpkin seeds)
    1 garlic clove, peeled
    black pepper to taste
    1/2 TSP salt
    6 oz olive oil
    2 TBSP red wine vinegar
    2 1/2 TBSP cotija cheese (or parm)
    1 bunch fresh cilantro, stemmed
    .75 cups Greek yogurt - plain
    2 TBSP water

Directions

Place all ingredients except cilantro, yogurt and water in a blender or food processor.
Blend about 10 seconds, then add cilantro little by little until blended smooth.
Put yogurt and water in a large stainless steel bowl and mix with a wire whip until smooth.
Add the blended ingredients to the yogurt mixture and mix thoroughly.
Place in airtight container and refrigerate - it will keep for up to 3 days.
