Introduction

Ingredients

    2 tbsp. olive oil
    1 large Vidalia onion
    3 cloves garlic, minced
    1 stalk celery, diced
    1 teaspoon kosher salt
    1/2 cup tomato sauce
    1 teaspoon tumeric
    1 teaspoon basil
    dash cinnamon
    dash cayenne pepper
    1 bay leaf
    4 cups water
    1 14 oz. can chick peas, drained & rinsed
    3 cups kale leaves, chopped, stems removed

Directions

In soup pot or large saucepan heat oil and saute onion, garlic, and celery until tender. Add sweet potato and salt; saute 3-4 more minutes.

Add seasonings, tomato sauce, water, chickpeas and kale. Bring to a boil. Lower heat and simmer for about 25 minutes or until sweet potatoes are tender. Taste half way through and adjust seasonings if necessary.
