Introduction

A friend made this for a women's luncheon and it was amazing! Never knew fresh kale could be eaten without cooking it because of how it's known to be tough.

As the days go on, the salad gets better! Recipe says 8 servings, but we add more kale and it lasts all week for our family. :-)

Number of Servings: 8

Ingredients

    1/2 c Olive Oil
    1/4 c Lemon Juice
    3 Cloves, Garlic - mashed
    1/4 tsp crushed Red Pepper (or to taste)
    1/4 tsp coarse salt
    2 Bunches of fresh Kale, ribs removed, leaves cut into pieces
    1/2c Grated Parmesean cheese (any variety such as Parm/Romano is awesome too)

Tips

I put 20 mins of prep time for the cutting up of the kale. Once it's all prepped, it takes 5 minutes to toss together.

I found that the salt was really not necessary with the flavor of the olive oil, pepper and parmesean cheese. I didn't miss it at all and nobody noticed the omission.


Directions

In a gallon size zip lock bag, combine the Olive Oil, Lemon Juice, Crushed Red Pepper and Salt (to taste).

Seal and mix, then add cut up Kale to the bag (it will all fit, tried it), seal and shake to coat.

Open bag and add grated cheese. Close again and shake.

Pour into large salad bowl and serve!
